Veggies, Camping and Men...

Camping can be a great relaxing experience - or it can be a stressful, tiring one.

Never decide on the spur of the moment, "Hey, lets throw some clothes and food in the travel trailer and go camp out!".... NEVER do this.

We went camping this weekend, and it was relaxing on the mind - the body, however, is a completely different story altogether.

We all know that when camping your options are as limited as you make them. Sure, you can bring a smorgasbord of items to cook and prepare, but if you don't have the room, fridge and electricity to store and use those items then it's never going to work.

We camped in a campground with no electrical hookups, no water and no bathrooms. Yes, we had a travel trailer (thankfully!!), but little to no room to chop veggies and cook (because the travel trailer is small, has no refrigeration, no stove- just a microwave and a gas burner top - and no counter space and it rained off and on all weekend), we were literally left with the standard hot dogs, soy hot dogs (for me), smores and canned food items.

Ouch.

The husband was happy as a pig in slop though, so I guess for Father's Day that was a score-one-for-mom deal.

Regretfully, however, I did not eat all that well this weekend AND my digestive system is definitely getting me back for it.

Ugh...

So moral to this story: ALWAYS research the campgrounds you will be going to and make sure they at least have electrical hookups for travel trailers - and if they don't: FIND ONE THAT DOES.

Carefully plan out your food choices so that you can still eat a healthy, vegan, veggie-packed diet that you do not need to rely on refrigeration or ice coolers for. You do NOT need to rely on soy hot dogs and canned soups if you plan accordingly.

And for the love of all that is holy - NEVER forget your wok/skillet!
